This is a real uncomplicated notwithstanding delicious vegan springtime salad amongst tender lollo bionda, chickpeas, white asparagus tips, pino nuts together with fresh berries tossed inwards a flaxseed fossil oil dressing.

SaladFlaxseed Oil Dressing
  • 1/2 caput Lollo bionda / leafage lettuce, chopped
  • 150 g Chickpeas, cooked together with drained
  • 10 Strawberries, trimmed together with halved
  • 50 g Blueberries
  • 50 g Raspberries
  • 12 White asparagus tips
  • A handful pino nuts, dry out toasted
  • Basil
  • 60 ml Flaxseed fossil oil
  • Freshly pressed juice of 1 lemon
  • 1 tbsp Maple syrup
  • 1 clove Garlic, minced
  • 1/2 tsp Dijon mustard
  • Tri-colour peppercorns, freshly milled
  • Sea common salt
  1. Place all the ingredients for the dressing inwards a drinking glass jar, unopen the lid together with milkshake vigorously to mix well. Either purpose straight off or shop it inwards the refrigerator until gear upwards to use. Keeps for upwards to 1 week. Shake good earlier using.
  2. Place chopped lollo bionda leaves inwards 2 serving bowls. Add inwards cooked chickpeas together with berries. Arrange the white asparagus tips on overstep together with sprinkle the toasted pino nuts over. Garnish amongst basil leaves.
