- 200 g Black rice
- 450 ml Water
- Leftover roasted chicken, diced

| - 700 g Cauliflower, trimmed, cutting into florets
- 3 tbsp Olive stone oil addition extra to drizzle
- 2 tsp Cumin pulverization
- 2 Garlic cloves, chopped
- 3 tbsp Tahini
- 60 ml Lemon juice
- 60 ml Warm H2O
- Sumac, to serve
- Dried barberries, to serve
- Arugula, chopped, to serve
- Sesame seeds, toasted, to serve

- Cook the dark rice inwards a medium saucepan of lightly salted boiling H2O for 35 minutes or until simply tender. Transfer to a large bowl. Add inwards chicken. Toss amongst olive stone oil in addition to white balsamic vinegar. Taste in addition to season.
- Preheat oven to 200C/400F. Place cauliflower florets on a baking tray in addition to drizzle amongst i tablespoon of olive oil. Sprinkle amongst cumin. Roast for 25 minutes or until tender. Set aside to cool slightly. Transfer cauliflower mixture to a nutrient processor. Add garlic cloves, tahini, lemon juice, ii tablespoons of olive stone oil in addition to water. Process until smooth.
- To serve, spread cauliflower hummus inwards a broad bowl or platter. Drizzle olive stone oil over in addition to sprinkle amongst sumac, dried barberries, chopped arugula in addition to sesame seeds. Serve dark rice on the side.
